The upfront taste impact, which delivers overall taste intensity and initial burst of flavour, is harder to emulate than the middle or lingering impacts of salt. Our innovative approach to delivering salty taste while keeping salt content low enabled us to develop a cost-effective way of creating upfront salty taste by leveraging our understanding of fermentation, umami, kokumi and process science.

Improving Front-of-Package Nutrition Labels While Maintaining Great Taste 

Our taste experts selected the perfect combination of ingredients to reduce sodium and meet taste expectations. To build the upfront taste, we selected a mineral salt.  For an authentic upfront salty taste, we used a new-to-market Tastesense™ Salt solution. Next, to enhance the middle taste, we selected an umami and acids combination. Tastesense™ Masking hid the bitterness of the salt alternative. We then rebalanced the spices, herbs and flavours to match customer satisfaction with the original full-salt product.
